I concocted this recipe while out walking Daisy one night. I was happy when it turned out as delicious as I had hoped! =) It’s easy to make and relatively quick, provided you marinate and bake the chicken in advance like I did. I used a chipotle pepper marinade:
I let the chicken marinade all day, so the flavor was really intense. After the chicken was cooked I shredded it and stored it in the fridge for use the next night.
Because I’d done the chicken in advance the rest was easy. I sliced and sauteed the veggies (peppers and onions), rolled out the pie crust (pre-made, store-bought), sprinkled on some cheese, then topped with the chicken and sauteed veggies.
Once the ingredients were in place I folded over the dough, making a pocket. I pinched the edges together, then used a fork to seal them.
Popped them in a 375 degree F oven for about 25 minutes and voila! An easy dinner that tastes great!
Beer pairs nicely with these. I had a Harpoon Chocolate Stout. It was delicious.
